Nice to Meet You!

Hi everyone, my name is Rachael! And welcome to my blog, Nourished by Rachael. I’m a new Registered Dietitian-Nutritionist navigating the adult world. I look forward to getting to know each and every one of you through this platform and would love to introduce myself to yall!
I am a real southern girl at heart – born in Houston, raised in Atlanta, college in Auburn, Alabama (WAR EAGLE!), grad school in Houston, and now living in Atlanta once again! I love the warm weather, people, and especially the food. I really don’t think I could live anywhere where it gets colder than 30 degrees regularly.
I am in love with all things food – especially sweet potatoes, avocados, any fruit, and chocolate! My passion for cooking definitely comes from my mom. While growing up, mom cooked for our family pretty much every single night and her cooking is SO GOOD! I love the times when I get to go home and have a home cooked meal made by mom. She has taught me everything I know in the kitchen and still to this day I call her when I have questions while cooking something new.
I am so fortunate that I have found a career that aligns with my passion for food and cooking. I graduated from UTHealth with my Masters of Public Health and completed my dietetic internship in May of 2018. Shortly after, I studied a bunch and passed my RD exam! It was the single most greatest day of my life to date.
I completed my undergrad at the greatest university in the world AKA Auburn University. When I started out there I was a nursing major. I knew I wanted to work in healthcare because that’s all I’ve known and grown up around having physicians and nurses in the family. I grew up going to church on Sundays with my family and then afterwards going to work with my dad and while he made rounds on his patients, I sat in the ICU with the nurses and played games on the computers with them. The hospital setting is weirdly comfortable for me and that’s where my passion for caring for others began.
I had to take an intro to nutrition course for nursing and fell in love with the material and wanted more. I transitioned over to nutrition & dietetics after my sophomore year of college and it was the best decision I ever made for myself. Dietetics is the best of both worlds for me – food & healthcare. My graduating nutrition class at Auburn actually had a 100% match rate for dietetic internships which is unheard of.

I could go on and on about what drew me into healthcare and dietetics but I will save that for another time.
I have the two sweetest dogs in the world – Hallie and Butterbean! I adopted Hallie during my junior year of college from a local humane society. Butterbean is my boyfriend’s dog but I’ve taken him and now he likes me more than Taylor! Hallie and Bean both love to eat kale stems, sweet potatoes, spinach, apples, and peanut butter.

Here you will find nourishing and delicious food, meal ideas, and other lifestyle practices. I do not believe in diets so you won’t find that here. I believe every food has a place and purpose and food is something to be celebrated!
